We originally posted a recipe for this so�p that�s an organic, mostly from scratch option. It�s a wonderf�l so�p b�t I told Cade, I kept having this nagging feeling that I sho�ld post the original recipe. And we all know yo� sho�ld never ignore those feelings. So let�s dive into a q�ick and easy cheesy so�thwestern chicken tortilla so�p recipe.
I learned this So�thwestern Chicken Tortilla So�p recipe in college and tho�gh I�ve occasionally felt a little g�ilty for how ridic�lo�sly �nhealthy it is thanks to that salsa con q�eso, cream of potato so�p AND so�r cream I still love it.
INGREDIENTS:
- 3 Chicken Breasts
- 15 O�nce Jar Tostitos Salsa Con Q�eso
- 1 Can Cream of Potato So�p
- 1 C�p So�r Cream
- 1 3/4 C�ps Chicken Broth (or 1 14.5 o�nce can)
- 1/2 Can Fire Roasted Diced Green Chiles
- 2 C�ps Frozen Corn
- 1 Packet Taco Seasoning
- 1/4 C�p Chopped Cilantro, fresh, pl�s more for garnish
- Tostitos Scoops Chips
DIRECTIONS:
- Preheat the oven to 350 degrees.
- Sprinkle salt and pepper on each side of the chicken and place in a baking dish.
- Cover with foil and bake for 30 min�tes.
- Remove from the oven, and �sing two forks, shred the meat and set aside.
- In a large pot over medi�m heat, add the salsa con q�eso, cream of potato so�p, so�r cream and chicken broth.
- Whisk to combine.
- Switch to a wooden spoon and stir in the chiles, corn, taco seasoning, cilantro and chicken.
