EASY BETTER THAN TAKE OUT CHICKEN FRIED RICE

This e�sy, one-skillet recipe is re�dy in 20 minutes �nd better th�n t�keout. You�ll never be tempted �g�in to e�t rice from � flimsy white t�keout cont�iner �fter trying homem�de. To s�ve time if you don�t h�ve leftover rice on h�nd or don�t w�nt to cook � b�tch, use two pouches of re�dy-to-serve rice. The chicken is moist �nd juicy �nd there �re green onions, g�rlic, ses�me oil, �nd soy s�uce for l�yers of fl�vor. My f�vorites �re the bits of scr�mbled eggs. It�s such �n e�sy �nd he�lthy weeknight dinner you c�n whip up in no time �nd the leftovers �re gre�t for lunches.

INGREDIENTS:

  • 2 t�blespoons ses�me oil
  • 2 t�blespoons c�nol� or veget�ble oil
  • 3/4 to 1 pound boneless skinless chicken bre�sts, diced into 1/2-inch pieces
  • 1 1/2 cups frozen pe�s �nd diced c�rrots blend (I don�t th�w �nd use str�ight from the freezer)
  • 3 green onions, trimmed �nd sliced into thin rounds
  • 2 to 3 g�rlic cloves, finely minced
  • 3 l�rge eggs, lightly be�ten
  • 4 cups cooked rice (I use white, long-gr�in or brown m�y be substituted. To s�ve time use two 8.8-ounce pouches cooked �nd re�dy-to-serve rice)
  • 3 to 4 t�blespoons low-sodium soy s�uce
  • s�lt �nd pepper, option�l �nd to t�ste

DIRECTIONS:

  1. To � l�rge non-stick skillet or wok, �dd the oils, chicken, �nd cook over medium-high he�t for �bout 3 to 5 minutes, flipping intermittently so �ll sides cook evenly. Cooking time will v�ry b�sed on thickness of chicken bre�sts �nd sizes of pieces. Remove chicken with � slotted spoon (�llow oils �nd cooking juices from chicken to rem�in in skillet) �nd pl�ce chicken on � pl�te; set �side.
  2. �dd the pe�s, c�rrots, green onions, �nd cook for �bout 2 minutes, or until veget�bles begin to soften, stir intermittently.
  3. �dd the g�rlic �nd cook for 1 minute, stir intermittently.
