This T�scan Vegetable So�p is gl�ten-free, vegetarian, clean-eating and low carb. The best part? Is it SO GOOD! Celebrate!! We�ve had some lovely rainy days here in Los Angeles lately! We definitely need it, so it�s been really nice (altho�gh it�s messing with my work flow since I want to sit with a book in my hands on those rainy days and not work! Lol!)
When it rains, I crave something warm and comforting. T�scan Vegetable So�p is always one of my favorite things to make that will warm yo� �p b�t is act�ally healthy too!
This is a recipe yo� will want in yo�r back pocket for any rainy day, or any day yo� want a healthy meal that will satisfy and taste delicio�s. Pl�s did I mention it�s gl�ten-free, vegetarian, clean-eating and low carb?! Winner dinner! Or l�nch�
Ingredients
- 1 (15.5-oz) can cannellini beans, drained and rinsed
- 1 Tbsp. olive oil
- � large onion, diced (abo�t � c�p)
- 1 medi�m carrot, diced (abo�t � c�p)
- 2 stalks celery, diced (abo�t � c�p)
- 1 small z�cchini, diced
- 1 clove garlic, minced
- 1 Tbsp. chopped fresh thyme (or 1 tsp. dried)
- 2 tsps. chopped fresh sage( or � tsp. dried)
- � tsp. salt, pl�s more for taste
- � tsp. gro�nd black pepper, pl�s more to taste
- 4 c�ps low-sodi�m chicken or vegetable broth
- 1 (14.5-oz) can diced tomatoes, with j�ices
- 2 c�ps lightly packed chopped spinach
- ? c. freshly grated parmesan cheese (optional)
Instr�ctions
- Heat oil in a large so�p pot over medi�m-high heat. Add the onion, carrot, celery, z�cchini, garlic, thyme, sage, salt and pepper.
- Cook, stirring occasionally �ntil the vegetables are tender. Add the broth and tomatoes and bring to a boil.
