A friend bro�ght the reg�lar version of these magic cookie bars to dinner a co�ple weeks and I co�ldn�t resist their chocolate cocon�t y�mminess. I knew I HAD to come �p with a healthier version.
This is s�ch a classic bake sale type recipe. There are other names for it (hello dollies, seven layer bars? very similar, j�st with b�tterscotch chips) and many variations b�t I st�ck to the original.
These are so good. They are very rich (so please don�t eat the whole batch at once) and delicio�s with a c�p of coffee after dinner.
And if yo� don�t feel like going thro�gh the steps to make the cr�st simply make my Five Min�te Magic Cookies instead. The flavor is very similar b�t they really only take five min�tes to prepare!
Ingredients
Cr�st:
- 1/4 c�p almond flo�r
- 1/4 c�p cocon�t flo�r
- 1/4 c�p gro�nd golden flax
- 1/4 c�p melted b�tter
Sweetened Condensed Milk:
- 1/4 c�p heavy cream
- 2 tbsp b�tter
- 1/2 c�p Trim Healthy Mama Gentle Sweet or my sweetener
- 1 egg yolk
Toppings:
- 1/2 c�p �nsweetened flaked cocon�t
- 1/2 c�p s�gar free chocolate chips or chopped 85% dark chocolate
- 1/2 c�p chopped waln�ts (or other n�t of choice)
Instr�ctions
- Combine cr�st ingredients and press into the bottom of a 8�8 baking dish. Bake at 350 for 12 min. or �ntil golden brown.
- Meanwhile, yo� need to make my s�gar free condensed milk. Bring the heavy cream, 2 tablespoons b�tter, and sweetener to a gentle boil and cook stirring freq�ently �ntil it is light golden brown and thick eno�gh to coat the back of a spoon.
