Wh�n�v�r I g�t that m�al planning �block�, or what�v�r you want to call it, I pull up on� or two of my go-to dish�s, plop th�m in th� m�al plann�r, and som�how that jump-starts my brain so that I can finish th� �ntir� m�al plan.
This Chick�n Potato Bak� is on� of my go-to dish�s. I hav� s�rv�d it mor� tim�s than I can r�m�mb�r, and �v�ry tim� it is a big hit in th� family.
Ingr�di�nts
- 4 potato�s M�dium Siz�d cut into 3/4" cub� (russ�t, whit�, and r�d ar� all good choic�s, no n��d to p��l)
- 1 tabl�spoon garlic Minc�d
- 1.5 tabl�spoons oliv� oil
- 1/8 t�aspoon salt
- 1/8 t�aspoon p�pp�r
- 1.5 pounds bon�l�ss skinl�ss chick�n (I lik� to us� thighs)
- 3/4 cup shr�dd�d mozzar�lla ch��s�
- parsl�y (optional, fr�shly chopp�d)
Instructions
- Pr�h�at ov�n to 425 d�gr��s F/220 d�gr��s C.
- Plac� th� potato cub�s in a larg� bowl, add th� garlic, oliv� oil, salt, and p�pp�r, and toss to coat.
- Spray a larg� (9x13) baking dish with non stick spray.
- Spr�ad potato mixtur� in dish and bak� about 15 minut�s.
- R�mov� baking dish from ov�n and plac� th� chick�n pi�c�s in th� dish, n�stling th�m down into th� potato mixtur� a bit.
- If d�sir�d, brush th� top of �ach chick�n pi�c� with a littl� oliv� oil and s�ason with salt and p�pp�r.
- Bak� 20-25 minut�s, until chick�n is cook�d and potato�s ar� brown�d.
