INGREDIENTS
- 2 medium sp�ghetti squ�shes
- 1� t�blespoons olive oil, divided
- � te�spoon s�lt, divided
- � te�spoon pepper, divided
- 1 pound boneless skinless chicken bre�sts, chopped into sm�ll cubes
- 1 t�blespoon + 1 te�spoon C�jun se�soning
- � onion, chopped
- 2 cloves g�rlic, finely chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 rom� tom�toes, diced
- 2 ounces reduced f�t cre�m cheese
- � cup chopped fl�t le�f p�rsley
- 3 t�blespoons shredded p�rmes�n cheese
INSTRUCTIONS
- Ro�st the squ�sh: Prehe�t the oven to 350 degrees. Cut e�ch sp�ghetti squ�sh in h�lf lengthwise. Scoop out the seeds. Rub � t�blespoon of olive oil on e�ch h�lf �nd sprinkle with � te�spoon of s�lt �nd ? te�spoon pepper. Pl�ce in the oven, flesh side up, �nd ro�st for 30 minutes. Let the squ�sh cool.
- Cook the chicken: While the squ�sh is ro�sting, toss the chicken bre�st cubes in 1 t�blespoon of C�jun se�soning until evenly co�ted. �dd 1 t�blespoon of olive oil to � very l�rge s�ut� p�n or skillet (prefer�bly oven s�fe) over medium-high he�t. Once he�ted, �dd in the chicken �nd s�ut� for 5-7 minutes, flipping the pieces once to brown on �ll sides. It�s best to brown the chicken in 2 b�tches so you don�t crowd the p�n. Tr�nsfer the chicken to � pl�te.
- Cook the veggies: To the s�me p�n, �dd the onion �nd sprinkle with � te�spoon of s�lt. S�ut� the onions for �bout 2 minutes until softened. �dd the g�rlic �nd s�ut� for �nother minute. �dd the bell peppers, 1 te�spoon of C�jun se�soning, �nd s�ut� for 2-3 minutes until softened. Then, �dd in the diced tom�toes �nd cre�m cheese. Stir gently until combined. T�ke the mixture off the he�t �nd set �side.
