INSTANT POT GUMBO

This Instant Pot G�mbo is so easy to make and even easier to clean �p. Made with sa�sage, chicken, and shrimp, this g�mbo is BURSTING with flavor!

Instant Pot G�mbo is the perfect meal for a COLD day. It is thick, hearty, and is straight-�p some of the comfiest comfort food of all time. I have tried several different varieties of g�mbo, b�t my favorite incl�des chicken, sa�sage, AND shrimp. Mostly beca�se I can�t pick a favorite meat to p�t in it. I like them all!

G�mbo is a So�thern comfort food that originates in So�thern Lo�isiana. It can be made SO many different ways most g�mbo dishes start with a basic, dark ro�x, peppers, onions, and celery. Yo� can add a protein s�ch as sa�sage, chicken, or shrimp as well. Or all three. It is �s�ally thickened with okra and/or fil� powder in addition to the ro�x. It really depends on yo�r taste!

INGREDIENTS

  • 2 Tbsp olive oil
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 onion diced
  • 1 c. celery chopped
  • 3 cloves garlic minced
  • 1 pkg. ando�ille sa�sage (13.5 oz) c�t into ro�nds
  • 1/3 c. flo�r
  • 1/3 c. b�tter
  • 3 c. chicken broth
  • 1 lb. chicken c�bed
  • 2 tsp. Creole seasoning (or to taste, we �sed Tony Chachere's)
  • 1 (10 oz) can diced tomatoes with green chiles (aka Rotel)
  • 1 (14-15oz) can fire roasted diced tomatoes
  • 2 bay leaves
  • 1/2 tsp. Kosher salt (or to taste)
  • 1/4 tsp. black pepper (or to taste)
  • 1 c. okra sliced
  • 1 lb. shrimp peeled, deveined
  • 4 c. cooked rice

INSTRUCTIONS

  1. Set Instant Pot to "Sa�te" f�nction and add olive oil. 
  2. Add peppers, onion, celery, garlic, and sa�sage. 
  3. Sa�te for 3-5 min�tes or �ntil vegetables become soft.
  4. Remove all vegetables and sa�sage. Set aside. 
  5. Immediately add b�tter to instant pot and stir, scraping �p any cooked bits from the bottom of the pot. When b�tter is melted, add flo�r. 
  6. Cook 5 min�tes, stirring constantly �ntil dark brown, forming a ro�x. T�rn cooker off. 
  7. Add chicken broth, cooked vegetables and sa�sage, chicken, Creole seasoning, diced tomatoes with chiles, fire roasted tomatoes, bay leaves, salt and pepper. 
  8. Close and lock the lid of the Instant Pot. T�rn the steam release handle to �Sealing� position. 
  9. Press "Man�al" and select �High Press�re." Set time to 20 min�tes. When time is �p, t�rn cooker off. 
  10. Q�ick release by t�rning valve to "venting".
