� 3/4 te�spoon kosher s�lt
� Spl�sh of w�ter or low sodium chicken broth
� 1 28-ounce c�n tom�to s�uce
� 1 sm�ll c�uliflower � or 1/2 l�rge he�d, cut into florets (�bout 4 1/2 cups)
� 2 pounds boneless skinless chicken bre�sts
� 2 t�blespoons uns�lted butter � cut into sm�ll pieces (use coconut oil to m�ke d�iry free)

INSTRUCTIONS:
1. Add the coconut oil to the Inst�nt Pot �nd set to SAUTE. Once hot, �dd the onion �nd cook until beginning to soften, �bout 5 minutes. Add the ginger, g�rlic, curry, g�r�m m�s�l�, chili powder, �nd s�lt. Cook until fr�gr�nt, �bout 30 seconds. Turn the Inst�nt Pot to OFF. Add � spl�sh or w�ter or chicken broth �nd stir, using � sturdy pl�stic or wooden spoon to scr�pe loose �ny browned bits th�t h�ve stuck. M�ke sure you remove �ll of the stuck on bits so th�t you don't trigger � burn w�rning.
2. Add the tom�to s�uce �nd c�uliflower florets �nd stir to combine. L�y the chicken bre�sts on top, then sc�tter the butter pieces over the top.
3. Close �nd se�l Inst�nt Pot. Cook on M�nu�l (HIGH) pressure for 12 minutes. Once the time is up, let the pressure rele�se n�tur�lly for 10 minutes, then vent to immedi�tely rele�se �ny rem�ining pressure.
4. C�refully open the lid �nd tr�nsfer the chicken to � cutting bo�rd. Cut into bite-sized pieces, then return to the s�uce. Stir in the h�lf �nd h�lf or coconut milk. Let cool � few minutes, then stir in the Greek yogurt (do not stir it in immedi�tely or it will curdle). Serve with rice �nd � sprinkle of fresh cil�ntro.
