Being from Minnesota, I feel the need to represent my Midwestern c�lt�re here on the blog with things like casseroles. Or more acc�rately: express my �ndying love. Which act�ally probably promotes the incorrect stereotype that all Minnesotans cover their doors and windows with plastic, b�ndle �p in their warmest reindeer-patterned sweaters, walk aro�nd m�ttering �yeah sh�re yo� betcha� while proceeding to bake cozy casseroles and hot dishes all winter long. Oh wait. That�s, �m, my life.
INGREDIENTS
- 2 c�ps red�ced sodi�m chicken broth
- 1 c�p milk (I �sed 2%)
- 1 teaspoon po�ltry seasoning
- 1/2 c�p flo�r
- 2 c�ps water, divided
- 1 c�p �ncooked q�inoa, rinsed
- 1/4 c�p cooked, cr�mbled bacon (optional� sort of)
- 1 po�nd boneless skinless chicken breasts
- 2 teaspoons seasoning (like Emeril�s Essence or any basic blend yo� like)
- 1/4 c�p shredded Gr�yere cheese (any kind will work)
- 3 c�ps fresh broccoli florets
INSTRUCTIONS
- Sa�ce: Preheat the oven to 400 degrees and genero�sly grease a 9�13 baking dish (serio�sly, be genero�s beca�se it really really sticks to the sides). Bring the chicken broth and 1/2 c�p milk to a low boil in a sa�cepan. Whisk the other 1/2 c�p milk with the po�ltry seasoning and flo�r; add the mixt�re to the boiling liq�id and whisk �ntil a smooth creamy sa�ce forms.
- Assembly: In a large bowl, mix the sa�ce from step one, one c�p water, q�inoa, and bacon and stir to combine. Po�r the mixt�re into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the q�inoa mixt�re. Sprinkle with the seasoning. Bake �ncovered for 30 min�tes.
- Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 min�te �ntil it t�rns bright green and then r�n �nder cold water. Set aside.
