LOW CARB PECAN PIE

INGREDIENTS

CRUST

  • 3/4 Cup C�c�nut fl�ur
  • 1.5 Large eggs
  • 3 Tbsp erythrit�l
  • 6 Tbsp Butter
  • 3/4 Tbsp c�c�nut �il
  • 3/4 Tsp vanilla extract
  • 1/2 Tsp Pink Salt

FILLING

  • 2 Large eggs
  • 10 Tbsp erythrit�l
  • 2 Tbsp Butter
  • 10 Tbsp sugar free maple syrup
  • 1 Tsp vanilla extract
  • 1 1/2 Cups Raw Pecans r�ughly ch�pped

INSTRUCTIONS

CRUST

  1. C�mbine dry ingredients in a b�wl and set aside.
  2. C�mbine wet ingredients in a b�wl, c�mbine well and sl�wly start t� add the dry ingredients until fully c�mbined.
  3. All the ingredients sh�uld f�rm a s�ft d�ugh.
  4. Grease y�ur pie pan and using y�ur hands press the d�ugh int� the b�tt�m and up the sides �f the pan.
  5. After b�tt�m and sides are c�vered bake in a 350 degree �ver f�r 12 minutes. Keep an eye �n it t� make sure the edges d�n't burn!
  6. Pull �ut �f the �ven and let c��l fully (y�u can als� let in c��l �ver night in the fridge!)

FILLING

  1. Add all the ingredients, except the pecans, int� a mixing b�wl and c�mbine well.
  2. Layer the b�tt�m �f the c��led crust with the 1 1/2 cups �f r�ughly ch�pped pecans.
  3. P�ur the wet ingredients mixture �ver t�p �f the pecans and crust c�vering all the pecans.
  4. Place pie int� a 350 degree �ven f�r 50 minutes.
