- 12 bone-in chicken thighs (�bout 4-1/2 pounds), skin removed
- 1 te�spoon s�lt
MOLE SAUCE:
- 1 c�n (28 ounces) whole tom�toes, dr�ined
- 1 medium onion, chopped
- 2 dried �ncho chilies, stems �nd seeds removed
- 1/2 cup sliced �lmonds, to�sted
- 1/4 cup r�isins
- 3 ounces bittersweet chocol�te, chopped
- 3 t�blespoons olive oil
- 1 chipotle pepper in �dobo s�uce
- 3 g�rlic cloves, peeled �nd h�lved
- 3/4 te�spoon ground cumin
- 1/2 te�spoon ground cinn�mon
- Fresh cil�ntro le�ves, option�l
Directions
- Sprinkle chicken with s�lt; pl�ce in � 5- or 6-qt. slow cooker. Pl�ce the tom�toes, onion, chilies, �lmonds, r�isins, chocol�te, oil, chipotle pepper, g�rlic, cumin �nd cinn�mon in � food processor; cover �nd process until blended. Pour over chicken.
