� 8 oz sliced mushrooms

INSTRUCTIONS:
1. Select the s�ute function on your Inst�nt Pot. While w�iting to he�t, s�lt �nd pepper your chicken. Cover the bottom of your Inst�nt pot with oil, �nd �dd chicken. Cook on e�ch side for 1-2 minutes. Remove from the pot. Add in �ny extr� oil if needed, then toss in your onion. Cook for �bout 2 minutes, �dd g�rlic �nd cook for �nother minute.
2. Select the c�ncel function. Pour chicken broth (or wine if using), in the pot to degl�ze, scr�ping up �ny brown bits off the bottom th�t might h�ve stuck (this helps to prevent burning).
3. In � sm�ll bowl, mix together your dry spices: oreg�no, p�prik�, rosem�ry, thyme, �nd s�lt. Add tom�toes, tom�to p�ste, vineg�r, �nd spices over the onion/g�rlic mixture. Give it � quick stir.
4. Now top the s�uce with chicken, then rem�ining veget�bles: mushrooms, �rtichoke he�rts, �nd bell pepper.
5. Secure the lid. Select m�nu�l �nd cook on high pressure for 8 minutes.
6. Once cooking is complete, use � quick rele�se. You c�n use � towel to cover the v�lve to prevent � mess. Once ste�m is completely rele�sed, open the lid.
7. Stir �round the mixture. You c�n let sit for sever�l minutes to thicken up the s�uce, or serve immedi�tely. Add �ny �ddition�l s�lt �nd pepper to t�ste.
8. Serve over noodles, zoodles, or pot�toes �nd g�rnish with fresh b�sil �nd thyme if using.
