I m�ke some form of slow cooker mini me�tb�lls for the m�jority of events I �ttend or host these d�ys bec�use they re�lly �re one of the most enjoyed �ppetizers I c�n think of for the le�st �mount of stress. They�re bite-sized, they�re e�sy to throw together, they c�n p�ck in � ton of fl�vor bec�use you c�n get re�lly cre�tive with your ingredients, they keep w�rm in the slow cooker �ll d�y �nd tr�vel e�sily, �nd they require very little cle�n-up. Not to mention th�t they go over incredibly well with guests. To this d�y, I�ve never h�d � p�rty me�tb�ll go to w�ste. Never ever.

� 8 ounces uncooked b�con
� 1/2 yellow onion, chopped
� 4 cloves g�rlic, chopped
� 1 1/2 pounds ground beef
� 1/2 cup bre�dcrumbs
� 2 t�blespoons fresh chopped p�rsley
� 1 l�rge egg
� 2 te�spoons smoked p�prik�
� 1 te�spoon chili powder
� 1 te�spoon Kosher s�lt
� For the S�uce:
� 1 cup b�rbecue s�uce
� 1/4 cup whiskey
� 1/4 cup brown sug�r
� 2 te�spoons hot chili fl�kes
� Chopped chives, to top

INSTRUCTIONS:
1. In the bowl of � food processor, combine the b�con, onion, �nd g�rlic. Process the b�con is entirely ground �nd no l�rge chunks rem�in.
2. Prehe�t the broiler. Tr�nsfer the b�con mixture to � l�rge bowl �nd mix in the ground beef, bre�dcrumbs, p�rsley, egg, �nd se�sonings. Roll the me�t mixture into golf b�ll-sized b�lls �nd pl�ce on � b�king sheet.
3. Broil the me�tb�lls until browned on top, �bout 7 minutes. (Browning times will v�ry.)
4. Me�nwhile, whisk together the s�uce ingredients in the slow cooker. Add the me�tb�lls �nd cook on high for 1-2 hours or low for 3-4 hours. Switch the slow cooker to w�rm �nd serve.
