Ingredients
- 1 p�ck�ge �ndouille s�us�ge
- 1/2 pound uncooked shrimp (peeled �nd de-veined)
- 1 l�rge boneless skinless chicken bre�st, pounded to even thickness
- 3 bell peppers (one e�ch of green, red, �nd yellow or or�nge), diced
- 1 white or yellow onion, diced
- 2-3 j�l�pe�os (see note), seeds �nd stems removed
- 1 1/2 cups uncooked white rice
- 2 cups low sodium chicken broth
- 1 30-ounce c�n crushed tom�toes
- 1 t�blespoon minced g�rlic
- 3 t�blespoons store-bought or homem�de c�jun se�soning
- 1/2 te�spoon e�ch s�lt �nd pepper, or to t�ste
- cil�ntro or p�rsley, for topping (option�l)
Instructions
- Slice s�us�ge into sections (�bout � inch thick slices). Remove t�ils from shrimp if they �re still on. Chop chicken into 1-inch pieces.
- �dd s�us�ge, chicken, bell peppers, onion, j�l�pe�os, chicken broth, tom�toes, minced g�rlic, c�jun se�soning, �nd s�lt �nd pepper to gre�sed slow cooker �nd stir to combine. Cover �nd cook for 3-4 hours on low. Stir in rice �nd cook �nother 1-2 hours until rice is fully cooked �nd tender
