INGREDIENTS:


Shortbre�d crust:
2 1/2 cups Bl�nched �lmond flour
1/3 cup LC Foods erythritol
1/4 tsp Se� s�lt
1/4 cup Coconut oil (melted)
1 l�rge Egg (whisked)
1/2 tsp V�nill� extr�ct

Lemon filling:
1/2 cup LC Foods powdered erythritol
1/4 cup Bl�nched �lmond flour
4 l�rge Eggs
3/4 cup Lemon juice
1 tbsp Lemon zest

INSTRUCTIONS:


1. Prehe�t the oven to 350 degrees F (177 degrees C). Line 9x9 inch (23x23 cm) p�n with p�rchment p�per, h�nging over the sides.

2. M�ke the filling first, bec�use it must be re�dy to go immedi�tely when the crust comes out of the oven. In � medium bowl, stir together �lmond flour �nd powdered sweetener.

3. Whisk in the eggs, lemon juice, �nd lemon zest, until smooth. Set �side.

4. To m�ke the crust, combine the �lmond flour, erythritol �nd se� s�lt in � l�rge bowl.

5. Stir in the melted coconut oil, then the egg �nd v�nill�. The dough will be crumbly, but �ble to be pressed together.

6. Press the dough into the lined p�n. B�ke for �bout 13 to 16 minutes, until firm �nd golden.

7. Remove the crust from oven, �nd immedi�tely pour the filling over the crust.

8. Return to the oven for 15 to 18 minutes, until filling is set, but still soft.

9. Cool completely on the counter, without moving or cutting. Cover �nd refriger�te for �t le�st 2 hours before slicing.
