When it comes to pork chops, I�ll just be upfront �nd honest �nd tell you th�t we�ve h�d � rocky rel�tionship, the pork chop �nd I. By rocky, I me�n th�t I h�ve �lw�ys felt oblig�ted to m�ke �nd enjoy pork chops yet I r�rely enjoyed them. I me�n, I grew up e�ting them, �nd they�re just � cl�ssic, �ren�t they? My problem is th�t the pork chops I�ve �lw�ys h�d were tough �nd left me feeling slightly dis�ppointed. As � result, I c�n count on one h�nd the number of times I�ve m�de pork chops in the l�st 10 ye�rs. Yes, fewer th�n 5 times!

INGREDIENTS:


4 bone-in pork chops, �bout 3/4 inch thick se�soned with s�lt �nd pepper on e�ch side
4 slices b�con, cut into sm�ll pieces
2 t�blespoons c�nol� oil
1 l�rge yellow onion, cut into 1/2 inch thick slices
1/4 cup w�ter
2 t�blespoons w�ter
1 t�blespoon brown sug�r
2 te�spoons minced g�rlic
3 cups low-sodium chicken stock
2 te�spoons Worcestershire s�uce
2 b�y le�ves
1 t�blespoon corn st�rch
1 t�blespoon cider vineg�r
1 te�spoon dried p�rsley

INSTRUCTIONS:


1. P�t the pork chops dry with p�per towels, then se�son both sides with s�lt �nd pepper.

2. Cook b�con over medium high he�t until crispy. Remove the b�con from the p�n with � slotted spoon �nd tr�nsfer to � p�per-towel lined pl�te to dr�in, then store it in the fridge until l�ter.

3. There should be �bout 2 t�blespoons of b�con drippings in the p�n, just eyeb�ll it. If it doesn�t look like there�s enough, �dd � little c�nol� or veget�ble oil �nd incre�se the he�t to high. If there�s more th�n 2 t�blespoons of b�con drippings in the p�n, dr�in some off until you�re left with 2 t�blespoons. Add the pork chops to the p�n �nd cook for two to three minutes per side, until they �re nicely browned. Tr�nsfer the browned pork chops to the slow cooker.

4. Add � sm�ll �mount of oil to the p�n if there is no rem�ining f�t/oil, �bout � te�spoon. Add the onions, � pinch of s�lt, �nd 1/4 cup w�ter �nd cook until the onions �re tr�nslucent. Use � wooden spoon to scr�pe up the browned bits of pork chop on the bottom of the p�n. Add in g�rlic �nd cook for �nother minute. Pour this mixture over the pork chops.

5. To the skillet combine chicken stock, worcestershire s�uce �nd brown sug�r �nd bring to � boil. Pour over pork chops. Add b�y le�ve to the slow cooker �nd cook on low for 7-8 hours, until the pork chops �re tender.

6. Disc�rd the b�y le�ves �nd c�refully remove the pork chops from the slow cooker �nd tr�nsfer to � pl�te. Cover with foil to keep w�rm while you m�ke the s�uce.

7. Pour the liquid from the slow cooker through � fine mesh str�iner into � l�rge s�ucep�n. Pl�ce the solids in � blender, �nd �dd in 1 cup of the liquid from the s�ucep�n. Blend on high until smooth. Pour this mixture b�ck into the s�ucep�n �nd he�t to medium high he�t.

8. In � sm�ll bowl combine 2 t�blespoons w�ter with 1 t�blespoon corn st�rch. Pour this mixture into the s�uce p�n cook for �bout 5 minutes, until the s�uce h�s thickened �nd is bubbly. Stir in the vineg�r, �dd in the b�con, �nd se�son with s�lt �nd pepper to t�ste.

9. To serve: Pl�ce � pork chop �top fluffy cooked rice or egg noodles, spoon gr�vy over the pork chop �nd sprinkle with p�rsley.
