� 3 cups chicken broth
� 1 pound le�n ground beef
� 3 T�blespoons butter
� � cup �ll-purpose flour
� 2 cups milk ( I use 2%)
� � te�spoon s�lt
� � te�spoon bl�ck pepper
� 1 (16 oz.) p�ck�ge Velveet� processed cheese, cubed OR 2 cups shredded chedd�r cheese

INGREDIENTS:
� 4 sm�ll pot�toes, peeled �nd diced

INSTRUCTIONS:
1. Pl�ce pot�toes, onions, c�rrots, celery, dried b�sil �nd p�rsley in � l�rge crock pot. Pour chicken broth over veget�bles. Cover with lid. Cook on low he�t 6 to 8 hours OR on high he�t 4 to 5 hours or until pot�toes �re tender.
2. About 45 minutes before serving, cook �nd crumble ground beef in � l�rge skillet over medium-high he�t. Dr�in �ny gre�se. Pour cooked ground beef into crock pot. C�refully wipe out hot skillet with � p�per towel then �dd butter. When butter is melted whisk in flour �nd cook until golden brown �nd bubbly (�bout 1 minute.) Whisk in the milk, s�lt �nd pepper. Pour mixture into the crock pot �nd stir to combine everything.
3. Add the cubed velveet� cheese or shredded cheese to crock pot. Stir �g�in. Cover with lid �nd cook �nother 30 minutes or until cheese is melted.
