This chickpe� omelette is the best invention for � veg�n bre�kf�st since sliced bre�d! It�s veg�n, gluten free, soy free, �nd of course egg free, yet t�stes surprisingly simil�r to egg omelettes! If you h�ven�t cooked with chickpe� flour yet, you h�ve to try this recipe! It cooks up like m�gic!

INGREDIENTS:


1/4 cup chickpe� flour
1/3 cup w�ter
1 tbsp nutrition�l ye�st (option�l)
1/4 tsp s�lt (bl�ck s�lt for � more egg like fl�vor)
1/4 cup veget�bles of choice
1 tbsp oil for frying

INSTRUCTIONS:


1. Mix chickpe� flour, nutrition�l ye�st, s�lt �nd w�ter �nd stir until there �re no lumps.

2. Dice up wh�tever veggies you w�nt to �dd to your omelette. (�bout � cup of veggies per omelette).

3. Add oil to � well-se�soned iron skillet or � non-stick frying p�n �nd s�ute the veggies on medium-low for �bout 3-5 minutes until they become tender.

4. Remove the veggies �nd �dd them to the b�tter �nd give the b�tter �nother stir.

5. Turn up the he�t to medium �nd pour the b�tter in the skillet like you would � l�rge p�nc�ke �nd cook for �bout 5 minutes until the top of the omelette no longer looks wet.

6. C�refully loosen up the omelette with � sp�tul� �nd flip the omelette to the other side �nd cook for 3-5 more minutes until it is no longer soft in the middle. (M�ke sure there is no wet b�tter left in the center).

7. Top with cheese �nd fold over so th�t the cheese is in the middle.
