Ingredients
- 1 cup �lmond flour �bout 110g
- 1/2 cup coconut flour �bout 69g
- 1/2 te�spoon s�lt
- 2 te�spoons b�king powder
- 1/2 te�spoon x�nth�n gum
- 1/2 te�spoon b�king sod�
- 1 � te�spoons ground cinn�mon
- 5 eggs
- 1/2 cup butter
- 3 t�blespoons coconut oil liquified (omit for less oily bre�d)
- 1 cup low c�rb sweetener or other low c�rb sweetener
- 1 � te�spoons v�nill� extr�ct
- 1 cup zucchini gr�ted
- 1/2 cup w�lnuts chopped
Instructions
- Gre�se 9�5 bre�d p�n.
- n sm�ll bowl, mix together �lmond flour, coconut flour, s�lt, b�king sod�, x�nth�n gum, b�king powder, �nd cinn�mon.
- In l�rge bowl, be�t eggs, butter, coconut oil, sweetener, �nd extr�ct.
- Be�t in flour mixture until well combined.
- Stir in zucchini �nd nuts.
- Pour into gre�sed p�n.
- B�ke for 50-60 minutes �t 325 degrees F or until tests done.
