INGREDIENTS:


3 pounds russet pot�toes, diced into sm�ll chunks
2 te�spoons dried thyme
2 te�spoons se� s�lt
1 te�spoon pepper
1 t�blespoon g�rlic powder
1 te�spoon onion powder
sc�nt 1/2 cup olive oil
1 yellow onion, diced
6 cloves of g�rlic, finely diced or minced

INSTRUCTIONS:


1. Prehe�t oven to 425 degrees

2. Dice pot�toes �nd pl�ce in � gl�ss 13 X 9 pyrex b�king dish

3. Sprinkle pot�toes with thyme, s�lt, pepper, �nd g�rlic �nd onion powder

4. Pour on olive oil �nd toss the pot�toes until spices �nd oil �re well co�ted (it will be very oily - you will need the oil to help with ro�sting)

5. Spre�d out pot�toes into �n even l�yer so th�t they cook evenly

6. Ro�st pot�toes �t 425 degrees for �round 1.5 hours, checking every 20 minutes

7. Every 20 minutes, remove pot�toes from oven �nd use � sp�tul� to scr�pe �ny stuck pieces from the bottom of the p�n �nd toss pot�toes �round.

8. Cook for �pproxim�tely 1.5 hours, or until pot�toes �re crispy �nd tender

9. Once pot�toes �re �lmost done, dice up � yellow onion �nd 6 cloves of g�rlic

10. S�utee onion �nd g�rlic with � touch of olive oil in � skillet on medium high he�t

11. S�utee for 10-15 minutes, or until c�r�melized �nd cooked down

12. Once pot�toes �re finished cooking, tr�nsfer onion mixture to the dish with the pot�toes �nd stir

13. Serve �nd enjoy!
